Hi Holiday Girl.
There are a lot of parameters in selecting a Fishing Holiday,however the simplest ways,
select a destination where he can catch his prefered species of fish,possibly not overcrowded,the correct time of the year,so the season is open and somewhere you will both enjoy,I would suggest,if your husband is not a Fly Fisherman,you both try it,I'm sure you'll be both hooked,as it's good Sport & fun.
Remember even though the world is a huge place,you can go from on side to the other in a couple of days.
