I caught some Bluefish on an ocean fishing trip. It is very, umm, pungent tasting. We have been told that is just how bluefish is supposed to be. Does anyone know any ways to mellow the flavor and cook it so it tastes really good? I've been breading and frying it and although my daughter scarfs it down (daddy caught it, therefore it is delicious) my husband and I like ours drowned in ketchup or ranch dressing! Any help out there?

I always wondered why there wasn't the odours in the fish shops, compared to when we cooked fish ourselves. An old trick from a friend, who was told by a guy who once owned a FISH shop,Try a pinch of curry powder,in the batter, which in turn removes the odours.
So simple & effective,as you can't beat fresh cooked fish.

wash bluefish with sea salt and vinegar thoroughly. it can be fillet or just the whole fish is fine. then soak it with lemon, garlic, black pepper, shallot for 15 minutes or more. deep fry in very hot oil.after frying, place it in a serving platter.
on a separate pan, saute garlic, then add shallot, and then 2 cut-up tomatoes and sliced red pepper. add black pepper and a dash of salt to taste. when cooked, pour it over to the fried blue fish.
eat with white rice.... enjoy...
