I caught some Bluefish on an ocean fishing trip. It is very, umm, pungent tasting. We have been told that is just how bluefish is supposed to be. Does anyone know any ways to mellow the flavor and cook it so it tastes really good? I've been breading and frying it and although my daughter scarfs it down (daddy caught it, therefore it is delicious) my husband and I like ours drowned in ketchup or ranch dressing! Any help out there?

I think if mixed with many other ingredients and baked in the over the "pungentness" will mellow...

I always wondered why there wasn't the odours in the fish shops,compared to when we cooked fish ourselves.An old trick from a friend,who was told by a guy who once owned a FISH shop,Try a pinch of curry powder,in the batter,which in turn removes the odours.
So simple & effective,as you can't beat fresh cooked fish.

soak it in milk overnight....will not be as greasy

soaking it in milk over night IS the best! soak it bread it or not slow cook it on aluminum foil on the grill on the side boil butter olive oil fresh garlic shredded onion one chicken cube fresh basil lil bit of water when fish is done stir n pour to your liking over white/wheat rice or salad yummy!

Cook it fresh=thats the key. fillet and soak in milk for 2 minutes. rinse-meat will become firm. marinate for 2 hrs in you favorite marinade. cook in a hot skillet. till meat becomes light gray-good stuff

Marinate in teriyaki sauce for two hours in the refrigerator.
