Almost a casserole of fish, delicious, juicy and full of different tastes. All in one, a dish that is a whole meal.
Ingredients:
800 gram cod, 2 dl dry white wine (1 cup), 1 onion, 1 small can of tomato puree, 1 green and 1 red pepper, 1 tablespoon olive oil, 8 potatoes, the juice of half a lemon, 1 clove of garlic, 100 gram of grated cheese, a twig of thyme, pepper and salt.
Preparation:
Clean, dry and slice the cod into dices. Sprinkle with lemon juice. Peel the onion and the garlic, cut both rings and chop. Peel the potatoes and cut in slices of 3 mm. cut the peppers into rings.
Butter up a heat resistant dish and arrange the onion rings and garlic at the bottom. Then arrange fish dices, potatoes and peppers in layers. Sprinkle some cheese and salt and pepper between every layer.
Make a mixture of tomato puree, olive oil, pepper and salt, the crumbled thyme twig, the sugar and the water. Pour this mixture over the fish dish and finish with the grated cheese. Gently pour the white wine along the side of the dish. Put a few dices of fish on top of it and cover with aluminum foil.
Put the dish in a preheated oven of 200 degrees; take the foil away after 30 minutes and let it bake for another 15 minutes uncovered until the cheese on top is browned.
